How is maple sugar made?

Maple trees are native to North America, particularly around eastern Canada and the northeastern United States. In early spring, after a cold winter, the tree�s roots will absorb melting frost water, converting it into a sugary sap that flows through its trunk and branches. This sap is collected by tapping carefully placed holes in the tree�s trunk, allowing the clear, watery sap to naturally flow out. Respectful harvest means that the trees are not damaged and can live for hundreds of years.

To turn maple sap into syrup, the liquid is boiled in order to evaporate water, leaving a more concentrated and sweeter syrup. It takes around forty litres of sap to make just one litre of syrup. Maple sugar occurs when the sap is boiled for even longer than is required to make maple syrup until almost all the water content is gone, a very skilful process due to how easily the sugar burns.
